They open at 11 and close when it's gone — which tends to happen early. Catering and pre-orders are available if you plan ahead. The same Texas barbecue that made the original a destination now runs out of this Katy address, where the pit turns out what the Roegels have built their name on. Open Tuesday through Sunday, closed Mondays. When you're this far out the Katy Freeway, it's the place to stop.
