Steven and Kristen Rossler opened this joint in 2016 and have kept it simple ever since. Low and slow on an offset burner, post oak smoke, and the kind of discipline that means when it's gone. Texas Monthly named it to their Top 50 in 2025.
Open Wednesday through Thursday, closed the rest of the week. Arrive early — the place sells out. No frills, no pretense, just the work.
