This is a craft barbecue joint on Portland's Southeast side that does the fundamentals: brisket, pulled pork, ribs, turkey, sausage, all cooked low and slow. Sides are made from scratch — mac and cheese, potato salad, coleslaw, pork and beans. The operation runs lean enough that next-day ordering is suggested; they move through what they make and don't linger. Ordering is straightforward: call or go online. They're closed Mondays and Tuesdays, open Wednesday through Friday from 11 a.m., Saturday from noon, Sunday until 6 p.m. Expect to plan ahead.
