Roaming Buffalo BBQ smokes bison and venison like they belong on the pit — because at a Colorado craft smokehouse, they do.
Coy and Rachael Webb opened this place in 2015 with a simple idea: take the animals of the region and treat them the way barbecue demands. Bison back ribs, lamb shoulder, homemade bison and venison sausages alongside beef brisket and pork. Everything dry-rubbed, smoked low and slow, sauce on the side. They open at 11 and close when it's gone — which tends to happen early.
Catering and pre-orders are available if you plan ahead. Otherwise, show up ready to queue and accept that some days you'll arrive to a sold-out sign. That's the cost of doing things properly.
