Mack "Doc" Holiday built this outfit in 1989, and it's been running on oak smoke and straight talk ever since. The Del Rio location sits on Braddie Drive and opens early — 7 a.m. most days — because barbecue doesn't wait for anyone. Wood-fired pits, Texas oak, and a country store attached: this is what barbecue looks like when it's not trying to be anything else.
