Mack "Doc" Holiday started Rudy's in 1989, and the barbecue is still cooked over oak the way it was meant to be. This Houston outpost on Northwest Freeway opens early — 7 a.m. most days — and stays open late enough to catch dinner or a weekend night. It's a country store and a barbecue joint in one, which means you can eat and browse without apology.

Open seven days a week, from 7 a.m. to 9 p.m. weekdays, 10 p.m. on Friday and Saturday. No fuss about it.
