Open to nine on weeknights, later on weekends.

Sam Jones BBQ

Winterville, United States

This is where it started. Wood-fired whole hog barbecue, cooked low and proper, the way the Piedmont has done it for generations. Sam Jones built something that works — simple enough that it's opened more than one location, but rooted enough that the original still matters. Open daily from 11 a.m., six days a week until 9 p.m., and Sundays until 8:30. Find it on Fire Tower Road in Winterville, or online at samjonesbbq.com.

Sam Jones BBQ

Raleigh, United States

Sam Jones is third-generation Eastern Carolina barbecue — his family has run the Skylight Inn in Ayden since 1947 — and in 2015 he and partner Michael Letchworth opened this expansion of that tradition. Whole hog cooked over wood, chopped with the crackling skin worked back in, the way it's done east of I-95. This Raleigh location on West Lenoir Street serves it daily from eleven. Come hungry; whole hog rewards it.

SAW's BBQ

Birmingham, United States

On the Southside, in the old Fat Sam's space on 11th Avenue South, SAW's runs the Alabama barbecue that made its name across the metro: pulled pork, ribs, and smoked chicken under a white sauce that's more mayonnaise than tomato and unmistakably Alabama. The stuffed baked potato — piled with pork — is the move if you're properly hungry. Counter service, and a line that tends to prove the point.

SAW's BBQ

Hoover, United States

The white sauce is the tell — tangy, mayonnaise-based, pure Alabama — and at the Hoover location in Riverchase Village it goes on the smoked chicken, the pulled pork, and about anything else you'll allow. SAW's has cooked this way since 2009: pork, ribs, chicken, and the stuffed baked potato the state named one of its 100 must-try dishes. Nothing about the room is fancy. The plate is the point.

Homewood, United States

SAW's started here in Homewood in 2009, in a room barely bigger than the pit. The name is Mike Wilson's old high-school nickname — Sorry Ass Wilson — which tells you how seriously the place takes itself and how seriously it takes the barbecue, which is to say: not the first, very much the second. Pulled pork, ribs, and smoked chicken come off slow, and the tangy, mayo-based Alabama white sauce goes on the chicken the way it's meant to. Order the pork-and-greens the regulars swear by.
