Mack "Doc" Holiday started this outfit in 1989, and it's built on oak smoke and the kind of patience barbecue demands. This Killeen outpost sits on East Central Texas Expressway and opens early — 7 a.m. most days — because some people want their barbecue before the day gets away from them.
It's a barbecue joint and a country store in one, which means you can eat and browse without apology. Wood-fired, oak-fueled, and run at a pace that respects the craft. Open until 9 p.m. on weeknights, later on weekends.
