Mack "Doc" Holiday built this outfit on oak smoke and no shortcuts — the barbecue joint and country store have been running since 1989, and they're still at it. This Allen location on North Central Expressway opens early and stays open late, the kind of place that treats barbecue as a thing worth doing properly, wood-fired and straightforward.
