Rudy's Country Store and Bar-B-Q does Texas barbecue the way it's meant to be done: wood-fired, oak-smoked, and without apology.
The Selma Rudy's on I-35 North smokes brisket and sausage over oak, sold by the pound, with a country store attached — open daily, mid-morning to evening. The format goes back to Rudolph Aue's 1929 Leon Springs grocery, barbecue added in 1989.
