Mack "Doc" Holiday built Rudy's in 1989 as a Texas barbecue joint with a country store attached — the kind of place that treats both sides of the business seriously. This Tucson outpost on East Ajo Way carries that same approach: oak-fired barbecue, no shortcuts, open early and staying late most nights.
It's a working barbecue operation, not a concept. Come hungry, come ready to order, and expect the kind of food that doesn't need a story to justify itself.
