Rudy's brings Texas barbecue and a country store to Gilbert, wood-fired and unhurried.
Mack "Doc" Holiday started this outfit in 1989, and it's grown into something with reach — multiple locations now, but each one runs the same way: oak-fired pits, no shortcuts, the kind of place that opens at six in the morning and means it. This Gilbert outpost on Higley Road is a proper country store and barbecue joint in one, which is to say it knows what it is and doesn't apologize for it.
Come early or come hungry. The hours run long most days, longer on weekends. Cash the wallet, fill the plate.
