Mike Wilson's Alabama barbecue landed in Hoover in 2022, bringing pulled pork, ribs, and the state's signature white sauce to Riverchase Village.
The white sauce is the tell — tangy, mayonnaise-based, pure Alabama — and at the Hoover location in Riverchase Village it goes on the smoked chicken, the pulled pork, and about anything else you'll allow. SAW's has cooked this way since 2009: pork, ribs, chicken, and the stuffed baked potato the state named one of its 100 must-try dishes. Nothing about the room is fancy. The plate is the point.
