The Colorado Springs Rudy's on South 31st Street carries the Texas format north — oak-smoked brisket and sausage by the pound, a country store and gas under one roof, open early and late. It traces to Rudolph Aue's 1929 Leon Springs filling station, barbecue added in 1989.
