Closed Mondays. The rest of the week, it runs until eight or nine in the evening, depending on the day.

Open Tuesday through Saturday, closed Sundays and Mondays. They take call-ins and handle catering if you need them. It's the kind of place that doesn't need to explain itself. You know what you're getting when you walk in. That's the point.

Randy Duncan started this operation in 2017. Saturday and Sunday, 1 p.m. until it's gone: USDA Prime brisket, pulled pork, ribs, jalapeño boudin links, beef cheek barbacoa, Dr Pepper oxtails, pork belly burnt ends. The menu moves fast. Destination Smokehouse opened in 2016 and trades in the fundamentals: brisket, ribs, turkey, and oxtails, all smoked. It's Texas-inspired cooking in Southern California, which means you either understand the appeal or you don't. Closed Mondays; open 11 to 8 the rest of the week. It's part of a larger operation, so there are other locations if you need them — but this one is in Murrieta.

The brand was born in 1988; this Troy outpost opened in 2010 on River Street and has been serving ribs, brisket, pulled pork, and chicken cooked low and slow ever since. The menu runs to sauces and rubs made in-house, and the kitchen doesn't rush — barbecue done properly takes time. Open daily from 11:30 a.m., with late hours on Friday and Saturday nights.

John "Big Daddy" Bishop opened Dreamland in Tuscaloosa's Jerusalem Heights in 1958, and for years the menu barely moved: hickory-fired pork ribs, white bread to catch the drippings, and the tangy Dreamland sauce sold by the bottle. This is the original — a cinder-block room off Jug Factory Road where the ribs still come off the pit the way they did six decades ago. The brand has since spread across Alabama and into Georgia, but Tuscaloosa is where it started. Ribs, sauce and white bread: the order that made the name.
