Dinosaur Bar-B-Que brings John Stage's slow-smoked Southern barbecue to Troy's River Street.
The brand was born in 1988; this Troy outpost opened in 2010 on River Street and has been serving ribs, brisket, pulled pork, and chicken cooked low and slow ever since. The menu runs to sauces and rubs made in-house, and the kitchen doesn't rush — barbecue done properly takes time. Open daily from 11:30 a.m., with late hours on Friday and Saturday nights.
