Dinosaur Bar-B-Que
The Atlas Review
The BBQ Atlas
Dinosaur Bar-B-Que brings John Stage's slow-smoked Southern barbecue to Hamburg, where ribs and brisket arrive the way they're meant to.
Since 1988, Dinosaur Bar-B-Que has been smoking meat low and slow — ribs, brisket, pulled pork, chicken, all treated with the same unhurried respect. This Hamburg outpost on McKinley Parkway carries that same philosophy: meat cooked properly, sauces and rubs made in-house, no shortcuts.
Open from 4 p.m. on weekdays (11 a.m. on Wednesday through Sunday), with late hours Friday and Saturday. The kind of place that understands barbecue isn't a rush.
