Dinosaur Bar-B-Que brings slow-smoked Southern barbecue to West 125th Street, where ribs and brisket arrive the way they should: low, slow, and without apology.
John Stage founded Dinosaur Bar-B-Que in 1988; the Harlem location, open since 2004, brought it to West 125th Street. Southern-style ribs, brisket, pulled pork and chicken, smoked low and slow, with the house sauces and rubs that finish them. Open daily from noon, late on Friday and Saturday.
