John Stage built Dinosaur Bar-B-Que on the principle that barbecue doesn't need to shout. Since 1988, the brand has held to that line — Southern style, smoked low and slow, with ribs, brisket, pulled pork, and chicken that speak for themselves. The Harlem location, open since 2004, sits on West 125th Street and keeps the same steady hand: no shortcuts, no theatre, just the work.
