Dinosaur Bar-B-Que started in Syracuse in 1988 and has been slow-smoking meat the right way ever since.
This is where it started: John Stage built the first Dinosaur Bar-B-Que in Syracuse in 1988, and the original still runs first-come, first-served — walk in, order at the counter, eat. Southern barbecue, low and slow, with the sauces and rubs that made the name.
