Dinosaur Bar-B-Que brings slow-smoked Southern barbecue to Court Street in Rochester, where John Stage's 1988 vision still holds: ribs, brisket, and pulled pork done low and slow.
This is one outpost of a barbecue operation built on the fundamentals — meat smoked properly, sauces and rubs made to purpose, no shortcuts. The Rochester location sits at 99 Court St and runs the same playbook as the rest of the chain: Southern barbecue, cooked the way it should be, served without fuss.
Open daily from 11 a.m., with extended hours Friday and Saturday until 10 p.m. Order the ribs, the brisket, or the pulled pork. They know what they're doing.
