The Bar-B-Q Shop sits on Madison Avenue doing real-pit barbecue the way it's meant to be done in Memphis. Frank Vernon started this place in November 1987, and it's been turning out ribs, Bar-B-Q Spaghetti, and Texas Toast sandwiches ever since — the kind of straightforward work that earned Food Network's nod for best ribs in America. Thurman and Hisako Roberts opened The Salt Lick in Driftwood in 1967, and the original still stands on FM 1826 where it began — open pits, meats seared then cooked slow over coals, served family-style. This is Hill Country barbecue at its source, a style of its own apart from the East Texas and Central Texas schools. It's long been cash-only and BYOB out here in the country. The Shed started in 2001 as a ramshackle roadside joint Brad Orrison and his family built largely from salvage, and it's grown into a Memphis in May Grand Champion without losing the junkyard-blues character. Barbecue and live music share the room on Mississippi Highway 57 in Ocean Springs — ribs, pulled pork, and a stage. Open daily, ten to nine.
