This is The Pit Room's west Houston location, running the same Texas barbecue programme that built the brand across the city. The kitchen opens at seven for breakfast tacos, then switches to brisket, ribs, and the rest of the line at eleven and runs until nine every night.
It's barbecue built for the rhythm of a working week — early enough for the morning shift, late enough for dinner, no day off. The address is Katy Freeway; the style is Texas; the hours don't quit.
