Big Bob Gibson Bar-B-Q
Decatur, United States
Big Bob Gibson has been a Decatur institution since 1925, and it's the birthplace of Alabama white sauce — chickens still get dunked in the tangy, mayo-based original that spawned a whole category. Four generations of the Gibson-McLemore-Lilly family have kept the hickory pits going, and pitmaster Chris Lilly has carried its championship barbecue onto the national stage. Order the pulled pork shoulder or the white-sauce chicken, and save room for pie.

Big Bob Gibson Bar-B-Q
Decatur, United States
Bob Gibson started this in Decatur with hickory, brick pits, and a mayonnaise-based sauce nobody else was using. The chickens get split, seasoned, smoked for three hours, then dunked. Pork shoulders smoke overnight — seventeen hours, dry rub, carved to order. It's Alabama barbecue done the way it was done, and the family hasn't seen a reason to change it. Chris Lilly runs the pits now — great-grandson-in-law, head pitmaster, and the man behind five Memphis in May Grand Championships and enough trophies to fill a shed. The white sauce still goes on chicken. The red sauce exists for people who need convincing. Both ship nationwide, along with the rubs, because some things travel. They're open six days, closed Sundays. There's a drive-thru if you're in a hurry and pies if you're not. Chocolate, pecan, lemon icebox — made in-house, same as the Brunswick stew. A hundred years in, they're still smoking meat the slow way and selling it by the pound. It works.

Ocala, United States

Black's BBQ
New Braunfels, United States
The barbecue joint Edgar Black Sr. started in 1932 now runs outposts across Texas, and this one sits on the 337 Loop in New Braunfels. Black's BBQ
Lockhart, United States
This is the original location, the one Edgar Black Sr. opened on North Main Street in 1932. Lockhart calls itself the Barbecue Capital of Texas, and Black's has been here longer than most people have been alive — low and slow over post-oak wood, the way it was done then and the way it's done now. The restaurant runs seven days a week, closing at eight most nights and half past on Fridays and Saturdays. It's a working pit, not a museum. Show up, order, eat. That's the deal.

Black's BBQ
Austin, United States
This is the Austin outpost of the barbecue business Edgar Black Sr. started in 1932. The method hasn't changed: post-oak wood, low and slow, Texas through and through. What began nearly a century ago now runs across multiple locations, and this one sits on Guadalupe Street serving brisket, ribs, and sausage the way the Blacks always have. Open seven days. They close at nine most nights, ten on Fridays and Saturdays. The pit doesn't care what day it is.

Bludso's BBQ
Los Angeles, United States

Bludso's BBQ
Van Nuys, United States
The Van Nuys outpost is Bludso's built for the Valley — takeout and delivery only, no dining room, the same Texas barbecue. Kevin Bludso's oak-and-pecan smoke turns out brisket, ribs, pulled pork and hot links seven days a week. Order ahead before you drive over.

Bludso's BBQ
Santa Monica, United States

The rest takes care of itself.

Blue Hound Barbecue
Dillard, United States

Bono's Pit Bar-B-Q

Bono's Pit Bar-B-Q
Jacksonville, United States
The business started in 1949, and decades later the formula hasn't changed: meat over a pit, no shortcuts. This location sits on Skinner Lake Drive, open six days a week — Sunday's the day off — serving lunch and dinner to a city that's had plenty of time to decide whether it's worth the drive. It's barbecue done the old way, in a region where that still means something. The kind of place that doesn't need to explain itself because the smoke does that work. If you're near the lake and hungry, you know where to go.

Bono's Pit Bar-B-Q

They're closed Mondays and Tuesdays, open Wednesday through Friday from 11 a.m., Saturday from noon, Sunday until 6 p.m. Expect to plan ahead.
