Rudy's started in 1989 with Doc Holiday and a wood-fired pit; now it's a country store and barbecue joint that knows what it came here to do.
This is close to where Rudy's barbecue started. Rudolph Aue opened a filling station and grocery in Leon Springs, west of San Antonio, in 1929; barbecue joined the menu in 1989 and grew into a chain. The formula never changed — oak-fired meat by the pound, a working country store, and the sort of place people drive to on purpose. Order at the counter; the Sause is on the table.
