Old Jimmy Wilson's runs Central Texas–style barbecue out of the Tampiquito neighbourhood of San Pedro Garza García, in the Monterrey metro — oak-smoked the way it's done in the Hill Country, rather than the mesquite grilling more common in northern Mexico. Brisket is the thing to order: cooked low over oak, and the method shows on the plate. Texas fundamentals, carried south of the border.
