El DobleD BBQ

Querétaro, Mexico

El DobleD BBQ operates Thursday through Sunday, 1 p.m. until the meat runs out—which it does. Diego Castro moved from food trailers into a fixed kitchen on Paseo de la Reforma, where he cooks brisket, ribs, pulled pork, and sausage low and slow. The brisket is what locals talk about. Sides, house sauces, and sampler trays round out the order. No website, no branches, no pretense. Cash the register, take a seat outside, and eat meat that falls apart. Follow their Instagram for current hours and what's still available—the place moves at the speed of smoke and demand, whichever comes first.

El Norteño

Monterrey, Mexico

This is straightforward norteño cooking: carne asada, parrilladas, and hamburguesas, all done al carbón. The kitchen knows what it does and does it daily, seven days a week, from noon until half past ten at night. Find it on Avenida Constitución. Call ahead or message on WhatsApp if you need to — they're there to feed you, not to surprise you.

Old Jimmy's BBQ

San Pedro Garza García, Mexico

Old Jimmy Wilson's runs Central Texas–style barbecue out of the Tampiquito neighbourhood of San Pedro Garza García, in the Monterrey metro — oak-smoked the way it's done in the Hill Country, rather than the mesquite grilling more common in northern Mexico. Brisket is the thing to order: cooked low over oak, and the method shows on the plate. Texas fundamentals, carried south of the border. Open Thursday to Saturday noon to ten and Sunday noon to five; call ahead on +52 81 8172 3296 to check the day's cut.

Old Jimmy's BBQ

Monterrey, Mexico

The Monterrey location carries Old Jimmy's oak-smoked, Central Texas–style barbecue to La Estanzuela, on the city's south side. Same method as the San Pedro original — brisket cooked low over oak — a second Nuevo León address for a growing local name.
