Mack "Doc" Holiday built Rudy's in 1989 as a place where barbecue and mercantile lived together — a Texas idea that has held. This Laredo outpost carries that same sensibility: oak smoke, proper timing, the kind of operation that opens early and stays open late because people need to eat.
Open seven days a week from 7 a.m., with extended hours Friday and Saturday. No fuss, no shortcuts. Just barbecue done the way it was meant to be.
