The Las Cruces Rudy's on North Telshor brings the Texas country-store format to New Mexico: oak-fired brisket and sausage by the pound, a convenience store up front, open seven days morning to night. The chain goes back to a 1929 Leon Springs filling station that added barbecue in 1989.
