The Corpus Christi Rudy's cooks over oak and keeps the chain's long hours — from 7 a.m. most days, to 10 p.m. Friday and Saturday. It's the country-store-and-barbecue format that started as Rudolph Aue's 1929 Leon Springs filling station and became barbecue in 1989. Brisket and sausage by the pound; bring an appetite.
