Kelly's Hill Country BBQ does Central Texas barbecue the way it's meant to be done: low and slow, and gone by closing time.
Kelly Evers opened this place in 2020 on Ranch Road 12 in Wimberley, and it runs on the principle that good barbecue doesn't linger. They smoke pit-style, sell out early most days, and keep hours that match the pace of a working kitchen — closed Sundays and Mondays, open Tuesday through Saturday from 11 until the meat runs out.
Central Texas barbecue, no frills. Get there early.
