Bark Barbecue — Brooklyn
The Atlas Review
The BBQ Atlas
Ruben Santana brings Texas smoke and Dominican flavour to Brooklyn — brisket, ribs, and maduros under one roof.
Bark runs Texas-style low-and-slow over white oak, then does what most smokehouses don't: sets Dominican and Caribbean plates right alongside the brisket. Quesos fritos and maduros next to the pulled pork and ribs — two traditions off one pit. This is the Water Street location; pickup orders run through the website.
