Rudy's on 360 is a country store and barbecue pit that knows what it is and doesn't apologize for either.
Mack "Doc" Holiday started Rudy's in 1989, and the outfit has held to oak-fired barbecue ever since — no drift, no trends. This outpost sits on South Capital of Texas Highway, open from 6 a.m. most days (6:30 on Sunday), and stays late on weekends. It's a working country store attached to a working pit, which is exactly the point.
Order at the counter, eat at a table, and move on. The barbecue is cooked over oak. Everything else follows from that.
