Mack "Doc" Holiday started this outfit in 1989, and it's been wood-fired oak and no apologies ever since. This Albuquerque outpost on Carlisle does the Texas way — straightforward, unhurried, open from seven in the morning until nine at night. A barbecue joint that knows what it is and doesn't feel the need to explain itself.
