This Albuquerque Rudy's on Carlisle brings the Texas country-store format to New Mexico: oak-smoked brisket and sausage sold by the pound, a convenience store up front, open seven to nine. The brand goes back to a 1929 filling station in Leon Springs, Texas, that added barbecue in 1989 — oak and butcher paper ever since. Try the Sause; try the creamed corn.
