Ray's runs a tight operation on Santa Fe Avenue in Huntington Park: brisket, ribs, and sausage, done without fuss. The place knows what it does and doesn't linger over it. Tuesday through Saturday, 10 a.m. to 3 p.m., and then it's gone. Plan ahead.
