CuracaRibs brings Texas smoke to the side of Chile's busiest highway, forty-five kilometres west of Santiago.
CuracaRibs runs traditional offset smokers out on Ruta 68, the highway between Santiago and Valparaíso, fuelled by Chilean roble and fruitwoods. The board is Texas method in a Chilean accent: brisket, costillares (baby back and St. Louis), pulled pork, smoked turkey and longanizas. This is the Curacaví outpost at kilometre 45.5, with free delivery to Santiago on larger orders. Come for the brisket to see what they're about.
