On South Loop 289 in Lubbock, Rudy's opens the oak pits at 7 a.m. daily — barbecue by the pound plus a country store, so there's more than one reason to stop. The chain began as Rudolph Aue's 1929 Leon Springs grocery and took up barbecue in 1989.
