Grant Pinkerton opened this Texas barbecue joint in 2016 on Shepherd Drive in Houston. The pit runs overnight — post oak and mesquite — and the counter closes when the meat is gone. That's the whole operation: smoke it right, sell it straight, stop when there's nothing left.
