Les Rhodes Jr. runs a Texas-style operation that moves slow-smoked brisket, oxtails, sausage, chicken, and pulled pork out the door fast enough that early arrival is not optional. They pack orders to ship nationwide, which means the place operates on its own schedule — open Tuesday through Sunday, closed Mondays, and gone when it's gone.
