GW's BBQ opened in 2017 and has earned its place in the conversation — James Beard semifinalist, Texas Monthly's top 50, and a fixture on the state's bucket lists. George Watts III runs a tight operation: open Wednesday through Sunday, 11 a.m. to 4 p.m., closed Mondays and Tuesdays. They smoke to order and sell out. Come early if you want to eat.
